Carolyn owes and runs Blackbirds Artisan Bakery at East Maitland. If you haven't found yourself at Blackbirds, you need to. I regularly order my sourdough from her. They mak
e over 900 loafs a week, each taking over 6 hours of work.
With you, Carolyn is sharing two of her dishes from her "7 day survival meal guide" -
Make up Monday – On the run – 15 mins
Salmon fillet dust with dried dill or fresh; lemon slices across the top. Glad wrap oven tray and cover with foil. This creates steam bath; 180ºC oven for 15-20 mins
Two potatoes in the microwave; any salad ingredients left over from last night & done
Too soon Thursday – 15 mins
Chicken Breast, fresh lime, garlic & Sesame Oil. Can be prepared in the oven same as the salmon or stove top pan
Pound fresh garlic clove with knife blade, thinly slice lime and sauté first in small amount sesame oil. Add Chicken breast and finish – turning as needed.
Serve with noodles, Carrots, Capsicum, Roast Cashews & Coriander dressed lightly in soy & Sesame
YUM! I love how simple food can be, you just need an idea.
Blackbird's Café is a regular meeting ground for my FLASH ladies (Carolyn opening after hours to accommodate us).
For the Greatest Shave, Carolyn baked trays of shortbread biscuits (Earl Grey+lemon zest; Pistachio+ cardamon), which we sold at the Harvest Markets (baking late into the Friday night, so they were ready for Saturday morning).
Carolyn is passionate about using fresh local produce to create real food. This year, Carolyn will take to the stage at national cooking workshops with celebrity chefs like Adriano Zumbo.
Thank you Carolyn for all you do, your friendship, support and of course baking my sourdough bread :)
