Let's Organise Lunch

 

I've never actually got into the raw zucchini concept, but this week I tried it and WOW its good!

 

Sunday is Organisation Day  (My FLASH ladies know this as part of their vocab). It is the only way, as to eat healthy we need to be organised.

 

This weeks lunch organisation (I am not always this creative but I have to be organised) was:

 

- rice paper rolls - how easy are they! First Time success!! Many of my girls this week have heard my excitement about these. 14kJ per wrap, stacked full of protein and vegatables; what is not to love?!

- spinach, feta and sundried tomato loaf - I make this regularly and freeze it in slices. The morning needed I take out of the freezer, by lunch time it is defrosted, and into the sandwich press it goes (it is fantastic warmed as the little bits of feta melt. Smells divine). Can serve with a side salad. Thanks Fast Ed.

- Nic's Raw zucchini cashew and tomato salad/lasagne DIY something!

To create:

Slice the zucchini

Whiz cashews, lemon juice, water and garlic together (about 1 cup of cashews, squeeze of a lemon, a few tbsp. of water - to make a good liquid paste and 1 clove of garlic)

Whiz 2-3 tomatoes, some basil leaves and about 1 tbsp tomato paste (some add olive oil and or sugar and or salt and pepper, depending on taste preferences)  

 

Then Layer

zucchini / cashew sauce / tomato sauce / baby spinach leaves / repeat. I topped with alpha sprouts just to look fancy.
