And I am going to educate you on tofu!
Why?! Because so many people don't know how to use it yet it can be so simple and so easy. Tofu often is remember as those fried oily cubes in a pad thai dish, but it's seriously not. And if you start tofu-ing your world you will see its actually an inexpensive nutritious food that belongs in your fridge.
Ok so what is it Nic?! Tofu is a source of protein (providing you with 8 of the 9 essential amino acids we need, as our bodies can not make) and it is a calcium and iron source - two key nutrients many of us miss out on.

I buy the firm tofu, cut it into slices, and any remaining put back into a tupperware container with some water (likes moisture) and store in the fridge for up to a week.
What else can you do with tofu? Anything!
Oven bake it, grill it, BBQ it, add to skewers (with meat and vegetable alternates), serve slices with shredded chicken and salad top or side salad, add marinated cubes to your pita bread pizzas. Because tofu has relative no flavour, you can add any flavour to it. It is really versatile.
